Air quality in the kitchen is so important

Breakfast is the most important meal of the day.

  • That’s what I was always told, and that is what I tell my customers.

I run a diner that only sells breakfast food, and closes down promptly at noon every day. It is a specialty shop, somewhat, and one that is slowly building a reputation for having the best breakfast food in the entire city. I figure it is better to focus and do one thing very well then to try and do everything and just be okay. My menu may not have something to please every palate, but it all very good food. I feel that a top quality ventilation system is integral for the cooking of top quality food. In a kitchen the air quality can turn foul in a heartbeat, so having enough exhaust fans and air vents is very important. Smoke, oil, burning bits of food, grease, all of these things impact the air quality, which in turn affects the taste of the food. Don’t just settle for a range hood, install extra air vents so you can make sure to have the best air circulation. Another benefit of this is cooling down the kitchen regularly will also cool down the staff, so they sweat less and work harder. You see some kitchens that are like saunas but I feel that cool, crisp, clean, and dry is the best air quality to have in your kitchen. It is also important to regularly clean out your vents and ductwork, so the grease and grime doesn’t start to accumulate.
